Our location in the middle of Soho is unparalleled and our beautiful Georgian townhouse accommodates around 40 covers, a small enough number that we pay real attention to our guests, yet big enough that we always have a buzzy atmosphere.

We have an unusually strong focus on the quality and provenance of our ingredients, using the very best premium suppliers across the board, as well as developing direct relationships with farmers and growers.

We are looking for candidates interested in building their knowledge and skills with wine specifically.

THE OPPORTUNITY:

Work daily with an award‑winning list that mixes mature classics from Italy and beyond, fine wines by the glass and fair pricing — ideal for building guest trust and your own palate.

Join pre‑service tastings/briefings; help prepare monthly print updates (vintage checks, bin changes, menu printing).

Present, pour and decant; make confident, value‑led by‑the‑glass and entry‑level bottle recommendations.

Learn directly from an experienced sommelier team.

Operational responsibilities including keeping the wine programme service‑ready (temps, closures, restocks, waste control). cellar runs, bottle retrieval, restocking, rotating BTG, polishing stemware, printing/organising lists and accurate POS/SKU/inventory updates.

Assist with food pairings

You will principally be stationed behind the bar, where you’ll be responsible for this section in particular. As we are a small team, from time to time it will be necessary to help and greet guests and assist the wider front of house team with guest service.

Your duties include preparing the bar area for service, restocking drinks and wines, assisting the sommelier with wine service, and with the rest of the team providing excellent dining experiences, ensuring seamless service and managing guest concerns.

As you progress, there will be more opportunities to offer customers advice about wine and assist the sommelier more widely.

YOU ARE

Hard-working, professional and dedicated and strive to deliver superior level of customer service that we are known for. An interest in Italian food and wine would be an advantage as would experience in similar fine dining and independent restaurants or private member clubs.

Have strong organisational skills to manage your mis-en-place, preparing for service in a busy central London location, and balancing guest and business requirements throughout the service.

Genuinely enthusiastic for wine and hospitality with strong attention to detail.

Prior quality FOH experience.

Flexibility to assist with all aspects of guest experience as required.

WSET Level 2 (or working towards) preferred, not essential– we will support WSET and CMS training.

Flexibility for evenings/weekends, including some late finishes.
